CHUNKY FRUIT OATMEAL COOKIES 
3/4 c. (1 1/2 sticks) butter, softened
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1/4 c. low fat milk
1 egg white, slightly beaten
1 1/2 tsp. vanilla
3 c. Quaker Oats
1 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. diced, dried mixed fruit
1 c. coarsely chopped nuts

Heat oven to 350 degrees. Spray cookie sheet with no-stick cooking spray or grease lightly. Beat butter and sugars until fluffy. Beat in skim milk, egg whites and vanilla. Add combined dry ingredients; mix well. Stir in dried fruit and nuts. Drop by scant 1/4 cupfuls into prepared cookie sheet about 3" apart. Flatten to 3" in diameter. Bake 13 to 15 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Store tightly covered. Yield: about 2 dozen.
