TURNIP PUFF 
1 tbsp. finely minced onion
2 tbsp. butter
2 tbsp. flour
3 c. mashed turnips
1 tsp. salt
1 tbsp. sugar
1/8 tsp. pepper
2 eggs, separated

Cook onion in butter until tender. Add flour and blend well. Add turnips, salt, sugar, pepper, and beaten egg yolks. Stir well. Beat egg whites until stiff but not dry. Fold into turnip mixture. Pour into buttered casserole. Bake at 375 degrees for 40 minutes. Yield: 6 servings.
