POSH SQUASH 
2 lbs. zucchini or yellow squash
2 eggs
1 sm. onion, chopped
1/4 green pepper, chopped
1 c. mayonnaise
1 c. grated Parmesan cheese
Bread crumbs
Salt & pepper to taste

Cook squash until tender in lightly salted water. Drain. Beat eggs well and add onions, green pepper, mayonnaise, cheese, and salt and pepper to taste. Fold this mixture into the squash. Top with bread crumbs and bake in 350 degree oven for 45 minutes. Serves 6 to 8.
