PENNSYLVANIA DUTCH FUNNEL CAKES 
3 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
2 c. milk
2 eggs, beaten
Frying vegetable oil
Sugar

Sift together the flour, baking powder, salt and sugar.

Combine the milk and beaten eggs, mixing well by hand or with a mixer until smooth. Add the flour and continue beating until smooth.

Heat frying oil to 375 degrees in a skillet or electric fry pan. Pour batter into hot oil through funnel, manipulating as you go along to create a pattern. Control the outlet with a finger.

Turn carefully to brown the top side of the funnel cake.

When done, lift carefully onto a paper towel to drain. Place on plate and dust with XXXX sugar.
