FRANKFURTER CREOLE 
2 tbsp. shortening
1 lg. onion, thinly sliced
1/2 green pepper, cut in narrow strips
1/2 c. thinly sliced celery
1 (1 lb. 4 oz.) can tomatoes
1 (8 oz.) can tomato sauce
1 tsp. chili powder
1 tsp. sugar
1/2 tsp. salt
1 lb. frankfurters, sliced diagonally

Heat shortening in large skillet. Saute onion, pepper and celery over low heat for 5 minutes, or until vegetables are tender but not brown. Add tomatoes, tomato sauce, chili powder, sugar and salt. Mix thoroughly and simmer 10 minutes, uncovered. Add frank slices and heat. Serve over rice. 4 servings.
