RHUBARB COTTAGE PUDDING 
1/2 lb. rhubarb
1 c. sugar
1/4 c. butter
1 lg. egg
1/4 tsp. grated lemon rind
1 3/4 c. flour
2 tsp. baking powder
1/4 tsp. salt
2/3 c. milk
Rhubarb sauce

Heat oven to 350 degrees. Grease 8-inch square pan. Beat sugar and butter. Beat in egg and lemon. Add flour, baking powder, and salt alternately with milk, beating after each addition.

RHUBARB SAUCE:

1 lb. rhubarb
1/3 c. sugar
1/8 tsp. cinnamon
Salt

Cook covered.
