PINEAPPLE PORK CHOPS 
1 (8 oz.) can unsweetened pineapple slices
2 c. water
1 c. uncooked long grain rice
1/2 c. raisins
4 (1/2" thick) pork chops
1/4 tsp. salt
1 med. green pepper, cut into rings
1 sm. onion, cut into rings & separated
2/3 c. unsweetened orange or apple juice
2 tsp. cornstarch
1/4 tsp. curry powder

Drain pineapple, reserving 1/3 cup juice; set aside.

Combine water, rice and raisins in a lightly greased 2 1/2 quart shallow casserole; cover with heavy duty plastic wrap. Microwave at HIGH for 5 minutes; stir.

Arrange pork chops over rice; sprinkle with salt. Cover and microwave at MEDIUM (50% power) for 10 minutes, giving dish a quarter turn after 5 minutes.

Arrange green pepper, onion rings, and pineapple slices over the pork chops. Cover and microwave at MEDIUM for 20 to 25 minutes, give dish a quarter turn at 5 minute intervals. Let stand, covered 10 minutes.

Combine reserved pineapple juice, orange juice, cornstarch, and curry powder in a 2 cup glass measure; stir until cornstarch dissolves. Cover with wax paper, and microwave at HIGH for 2 1/2 to 3 minutes or until mixture is thickened and bubbly. Serve with pork chops, vegetables and rice. Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
