COCONUT BON BONS 
3/4 c. mashed potatoes, not too moist
1 lb. coconut (4 c.)
1 lb. confectioners sugar
1 tsp. almond flavoring
Chocolate or almond bark for coating

Combine ingredients except coating and roll into small balls and chill for 2 hours. Dip in melted chocolate coating and let dry on waxed paper. I dip mine in colored chocolate or white almond bark and tint it pink or green. This makes a lot of bon bons. Place in small paper candy cups and let ripen for 1 weeks. Makes about 5 dozen.
