GRAM'S CANDY COCONUT EASTER EGGS
(OR BON BONS)
 
1 bag (4 cups) coconut
1 can (14 oz) sweetened, condensed milk
2 boxes gelatin mix (jello) in your favorite flavor
1 1/2 teaspoon sugar
1 teaspoon vanilla
1 bag semi-sweet chocolate chips

Mix all ingredients until the coconut has absorbed the gelatin mixture. Be sure to taste the mixture to see if the gelatin still has a “grainy” taste. If so, keep mixing until that grainy taste is gone.

Shape the mixture into eggs with your hands. A good tip is to wash your hands after every 3rd egg or so. The mix will stick to your hands and it will be hard to shape unless your hands are clean.

Chill for a few hours (overnight is best) on waxed paper.

Dip into melted semi-sweet chocolate and place on waxed paper.

Tip: I use a cookie sheet covered with waxed paper. This recipe will make about 12 - 15 eggs about 1-2 inches long.

This recipe was passed down from my Mom's Mom and Grandmother to me. We try to make it every Easter! When my dog ate my cookbook where the recipe was attached (true story) I thought it was lost forever! A Google search turned up nothing! Thankfully, my Mom was able to retrieve it from her old recipe cards and I'm happy to share it with you!

This had been a family tradition in our house, but had miss making them the last 2 yrs. I could not find my recipe nor could mom. Glad to find it here. We leave some plain and add chopped nuts and/or cherries to some of ours. thanks for sharing it.

My mother used to make something similar when she was "room mother" for classroom parties only it was without additional sugar and vanilla. I can't imagine adding sugar as sweet as the milk, Jello, and coconut are already.

I'm sure if you left out the 1.5 teaspoons of sugar and vanilla, it would still be great.
