GRITS, SAUSAGE CASSEROLE 
1 c. grits
1 sm. onion, chopped
1/3 c. chopped green pepper
1 lb. pork sausage
1 1/2 c. (6 oz.) sharp shredded Cheddar cheese

Cook grits; set aside. Crumble sausage in large skillet. Add onions and peppers. Stir all until brown and vegetables are tender. Drain well. Combine grits. Melt 1 cup of cheese. Spoon into greased 10 x 6 x 2 inch baking dish. Bake at 350 degrees for 15 minutes. Sprinkle with balance of cheese. Heat until it melts.
