TOMATO SAUCE FOR MANICOTTI 
1 (28 oz.) concentrated tomatoes puree (Pope Brand) (280)
2 stalks celery (1 c.) (5)
1/2 c. onions, chopped (1//2 lg.) (30)
8 oz. mushrooms, chopped (40)
Butter flavored Pam (4)
1 garlic clove minced
1/4 tsp. Mrs. Dash or salt
1/4 tsp. black pepper
1 tsp. oregano
1 tsp. basil, dried
1 tsp. parsley flakes

Total calories 359. Use butter flavored Pam and spray skillet. Saute the garlic, mushrooms, onion and celery. Cool skillet. Add tomatoes and simmer, stirring occasionally for 10 minutes, until the sauce is lightly thickened. Add spices, stir all together once; cook 2 minutes, then remove from heat. (16 tablespoons = 1 cup; 64 tablespoons = 4 cups.) Makes 4 cups at 90 calories per cup or 5.6 calories per teaspoon.
