CORN CASSEROLE 
1 can cream corn
1 can whole kernel corn, drained
1 c. sour cream
2 beaten eggs
2 tbsp. sugar
1 1/2 sticks butter, melted
1 box Jiffy Muffin Mix
2 c. Mozzarella cheese (shredded for later)

Mix above ingredients (except cheese) in 2 quart bowl. Put in 350 degree oven (uncovered) for 35 minutes. Take out of oven (will look like big cake). Mix up and add half of cheese. Mix again and put remaining half of cheese on top. Bake in 350 degree oven (uncovered) for about 10 to 15 minutes to melt cheese. Don't brown cheese, just melt. Serve hot from oven. Use aluminum foil or cookie sheet under casserole during baking, may run over. This dish does not like to sit for awhile before being served, cheese will start to get firm and rubbery.
