FATTOUCHE 
2 lg. loaves Arabic bread, separated, toasted, broken into pieces
2 med. cucumbers, cut into sm. pieces
4 med. tomatoes, cut into sm. pieces
1 bunch scallions, cut into sm. pieces
1/4 c. olive oil
1 clove garlic (optional)
1 sm. bunch pursalane (optional) "buh-lee" or 1 bunch parsley
Salt and pepper to taste
Vinegar to taste

Combine all ingredients and toss well so bread absorbs vegetable juices. Serve on platter and garnish with pomegranate seeds.
