DIJON CHICKEN BREASTS 
2 tbsp. Dijon mustard
2 tbsp. vegetable oil
1 tsp. garlic powder
1/2 tsp. Italian seasoning
1 lb. chicken breasts, skinned and deboned
2 tbsp. oil for frying

In a medium glass bowl mix all ingredients except chicken breasts. Spread mixture over chicken breasts from both sides. Refrigerate for 1 hour. In a frying pan heat 2 Tbsp oil and bake the chicken for about 3 minutes per side or until done. Serve with rice or mashed potatoes.
