ZUCCHINI PIE 
3 c. diced, unpeeled zucchini
1 lg. onion, diced
8 oz. shredded Cheddar cheese
1/2 c. salad oil
1 c. Bisquick mix
4 eggs or Egg Beaters, beaten
1 tsp. salt
1/2 tsp. pepper
2 tomatoes, sliced

Spray 10 inch pie plate with Pam. Combine all ingredients except tomatoes. Mix until zucchini is covered. Pour into pie plate. Top with tomato slices. Bake at 350 degrees for 1 hour until top is lightly browned.
