EMPIRE BISCUITS 
Cream together:

6 oz. butter
1 c. sugar
1 egg

Add:

3 c. flour
1/2 tsp. baking soda
1 tsp. cream of tartar

Add milk, a little if necessary to bind mixture together.

Roll out to 1/8 inch thickness and cut into rounds using a glass or a biscuit cutter.

Bake at 375 degrees for 12 minutes; DO NOT BROWN. Cool completely.

Put two biscuits together with currant jelly and top with icing.

ICING:

Mix until smooth:

2 c. confectioners' sugar, sifted
2 tbsp. + 1 tsp. milk

Add one or two drops of food coloring if desired to the icing.
