EMPIRE BISCUITS 
2 c. flour
1 tsp. cream of tartar
1/2 tsp. baking soda
1/4 lb. butter (1 stick)
1/2 c. sugar
1 egg
1 tsp. vanilla

Cream butter and sugar, add egg and vanilla; mix well. Add dry ingredients. Roll out and cut circles with cookie cutter. Bake 10 minutes at 350 degrees. Makes 24 cookies (12 double). Put currant jelly or vanilla icing between layers. Ice cookie tops and top with 1/2 cherry.

Fantastic cookies and EXCELLENT recipe... better than shortbread... use parchment paper on both sides of dough when rolling out... do NOT bake the cookies until brown on the edges... I use imported currant jam because it has REAL currants in it... then a spicy gumdrop on top instead of the traditional cherry because it's more festive and irresistible.
