GREEN CHILI RELLENO 
1/4 c. butter
1/4 c. flour
1/2 c. milk
6 eggs, separated
Salt & pepper
1 lb. sliced Jack cheese
1 lb. sliced Swiss cheese
1 lg. can green chilies

Melt butter and flour; add milk, salt and pepper. Beat yellow of eggs and add. Beat egg whites and fold in sauce. Put 1/2 on bottom of 9"x13" pan. Fill chilies with cheese. Put the rest of sauce on top and bake at 350 degrees for 40 minutes.
