“MOM'S BISQUICK COBBLER” IS IN:

MOM'S BISQUICK COBBLER 
2 tbsp. butter
1 cup Bisquick
1/2 cup sugar
1/2 cup milk
3 cups cut-up peaches or other fruit of your choice (can be fresh, frozen (thawed) or canned)

Preheat oven to 375°F.

Melt 2 tablespoons butter in 8x8-inch baking dish. Mix Bisquick, sugar, and milk. Pour over melted butter. Spoon fruit over. If using canned peaches, pour on some of the juice also.

Bake at 375°F for 30 minutes. Note: May double the recipe and bake in 9x13-inch pan.

I cook fresh apricots from my tree, I cut up and put in microwave with sugar, butter, cornstarch, then I make the Bisquick and follow the instructions... so yummy. I use Bisquick for all my cobblers...

I love making this more breaded cobbler. I'm not a big fan of cornstarch and water. I've used strawberries and blueberries, but freshly picked mulberries are the most flavorful. I have even tweaked the recipe to add brown sugar, cinnamon, and or whipped cream cheese. But for the best taste and appearance, a homemade Bisquick recipe is choice!

This is the way my mom made it, but she'd/I take the juice, drain it into a small pan and add 2-3 teaspoons cornstarch and cook until clear and gelled. Since the juice is usually less than 1/2 cup, you will want to add a half cup of orange, apple or other complimentary juice if you have it. If not, add 1/2 cup water with 1 tsp. sugar (or to taste) to the mix with 1/2 tsp. vanilla or 1/4 tsp. almond extract. (Be sure to shake or stir the cornstarch with that for slurry before putting into the heated juice in the pan) Cool a bit then pour over the fruit on the top. It cooks through and makes a wonderful gooey 'filling' at the bottom.

I am not a fan of traditional cobblers, and neither is my family. This particular cobbler is more breaded, and in my opinion, a much better fit for those who don't hold soupy cobblers in high regard. This will be a signature dessert for my family!

I've been looking for this recipe for over a year. I made it for a family dinner and it all went. Some people had thirds. I know it looks strange to put the peaches on top the pancake mix but it tastes so much better. This recipe is dangerous to have its too good.

Made this recipe today and absolutely loved it. Didn't add any spices or added sugar to the top and was great!! Just used a dollop of Cool Whip topping. I used strawberry pie filling, yummo!!!
