HERBED TOMATO CHICKEN 
2 medium onions sliced
2 cloves garlic minced
1/2 c. water
3 whole medium chicken breasts, skinned and halved lengthwise
1 (7 1/2 oz.) can tomatoes, cut up
1/2 c. tomato sauce
1/2 c. sliced fresh mushrooms
1/2 c. chopped green peppers
1 tsp. dried basil crushed
1 tsp. salt
1 bay leaf
Dash pepper
1/4 c. dry white wine

In skillet combine first three ingredients, bring to a boil. Cover and simmer ten minutes. drain, add chicken to skillet. Combine remaining ingredients except wine. Cook uncovered for 15 minutes more. Remove bay leaf. Serve over rice.
