ZUCCHINI PANCAKES 
1/3 c. Bisquick
1/4 c. grated cheese
1/8 tsp. salt & pepper
2 beaten eggs
2 c. shredded zucchini
2 tbsp. butter
2 tbsp. grated onion

Mix Bisquick, cheese and pepper. Stir in eggs until mixture is moistened. Add salt to grated zucchini and drain 15 minutes in colander. Squeeze excess liquid. Fold zucchini into mixture. Fry 2 tablespoons of mix 2 to 3 minutes on each side.
