SALMON SOUFFLE 
3 tbsp. butter
3 tbsp. flour
1 c. evaporated milk
1/2 c. water
1/4 tsp. salt

Make white sauce (above). Pour all ingredients slowly over 4 beaten egg whites. Add 4 egg yolks and 1 pound can salmon, flaked. Pour into buttered baking dish. Place in pan of hot water and bake in 350 degree oven for 45 to 60 minutes. Best to use bottom shelf of oven. 6 servings.
