ZUCCHINI PIE 
6-8 c. zucchini

Peel, cut in half, remove seeds and slice in chunks as you would apples. Cook with 2/3 cup lemon juice until tender.

1 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1-2 tbsp. cornstarch

Simmer for a few minutes; remove from heat and let cool. Mixture will thicken.

BOTTOM CRUST:

1 stick butter
2 c. flour
1 c. sugar

Pat mixture into 13x9 inch greased pan. Spread zucchini mixture over crust.

TOP CRUST:

1 stick butter
1 c. flour
1 c. sugar
1 c. oatmeal

Mix and sprinkle on top. Bake at 350 degrees for 40-60 minutes until brown.
