CHICKEN FRICASSEE 
1 chicken
2 sprigs parsley (or 1 tbsp. dried)
1 carrot
2 stalks celery
1 onion
Vegetable oil
Flour
Salt
Pepper
Dumplings or biscuit dough

Cut up and brown chicken in hot fat. Cover with water; add salt and pepper to taste. Add parsley, carrot, celery and onion. Simmer 2 to 2 1/2 hours until tender.
