CHEESE TOPPED ITALIAN MEATLOAF 
1 lb. ground beef
1 egg, beaten (or 1/4 cup egg substitute)
1 (14 oz.) jar pizza sauce, divided
2 tablespoons finely chopped onion
2 tablespoons finely chopped green pepper
1 teaspoon garlic powder
salt and pepper, to taste
1/2 cup water with 1 dissolved beef bouillon cube
OR 1/2 cup plain water
2/3 cup oatmeal
2 slices Mozzarella, Provolone, Cheddar or American cheese

Preheat oven 350°F (325°F for glass) and coat 8x8-inch baking pan with cooking spray.

In large bowl, combine egg, 1/4 cup pizza sauce, chopped onion, chopped green pepper, garlic powder, salt and pepper. Stir in bouillon or water.

Mix in ground beef and oatmeal. Put into prepared baking pan, forming into a loaf.

Bake 1 hour or until done.

Cut cheese slices into strips and arrange over top of finished meatloaf. Allow cheese to melt while letting meatloaf rest for 10 minutes before slicing.

While meatloaf rests and cheese melts, heat remaining pizza sauce in small saucepan on stovetop or microwave in small bowl. Serve over meatloaf slices.

Best served with pasta of choice mixed with butter and grated Romano or Parmesan cheese, a green salad and warmed garlic bread.
