“CHICKEN MARIA” IS IN:

CHICKEN MARIA 
3/4 cup Italian seasoned dry bread crumbs
1/4 cup grated Parmesan cheese
4 or 6 chicken breasts, boneless and skinless
1/2 cup finely chopped onion
2 tablespoons olive oil
2 tablespoons flour
1 cup milk
1/4 teaspoon nutmeg
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
4 oz. (1/2 cup) ham, bacon or pepperoni, chopped

Preheat oven 350°F (325°F for glass) and spray 9x9 or 13x9-inch baking pan with cooking spray.

On plate, combine bread crumbs and cheese. Dredge chicken breasts in crumb mixture to coat. Arrange in prepared baking pan. Set remaining crumb mixture aside.

In saucepan, cook onion in olive oil until tender. Blend in flour. Whisk in milk slowly, and cook stirring until thickened and bubbly. Add seasonings and cook and stir 1 minute more. Stir in spinach and ham, bacon or pepperoni. Remove from heat.

Spoon spinach mixture over chicken breasts and sprinkle with remaining crumb mixture. Bake, uncovered, for 35 to 50 minutes or until done.

Serves 4 to 6.

Serve chicken on bed of buttered fettuccine, a simple tomato & cucumber salad and toasted garlic bread.
