NEW YORK DELI POTATO SALAD 
4 lbs. potatoes

Boil in skin until done but do not overcook. Skin and slice into casserole dish. Mix together: 1 c. water 1 1/2 tbsp. salt 2 tbsp. sugar

Warm in microwave until sugar and salt dissolves then pour over potatoes, cover and place in refrigerator overnight. Next day, add: dillweed, parsley, chives and green onions to taste. Mix 1/2 cup sour cream and 1/2 cup mayonnaise, then stir into potatoes and herbs.

Since microwave ovens vary in power, you may need to adjust your cooking time.

The only revision I would give this recipe is to cut back the mayo (a smidge) and add plain yogurt to the mix (1/4 cup should do it). A pinch of celery seed and touch of vinegar and a pinch of garlic powder and VOILA you are in NEW YORK. GOD BLESS AMERICA YA'LL.
