CHEESE PASTIES 
1 c. milk, scald and cool to lukewarm
1 tbsp. yeast, dry
1/4 tsp. warm water
1 tsp. salt
1 egg, well beaten
1/2 c. brown sugar
4 c. whole wheat flour, can be up to 4 1/2 c.
1/2 c. melted butter

Dissolve yeast in water. Combine milk, salt, egg, and sugar in large bowl. Add yeast and stir in 2 cups of flour. Mix well and add butter. Mix well and add remaining flour. Knead dough until smooth and let rise in warm place 1 1/2 to 2 hours.

FILLING:

4 potatoes, diced
4 carrots, diced
2 onions, minced
1 sm. rutabaga, diced
8 oz. sharp cheddar cheese, diced
8 oz. colby cheese, diced
8 oz. Mozzarella cheese, diced

Mix above together well. Divide dough into 8 parts and roll out between waxed paper. Fill each with a mixture of above and top with dab of butter. Salt and pepper to taste. Bake on a greased cookie sheet at 350-375 degrees for 30-40 minutes.
