LEMON BATTER FISH | |
1 lb. fish fillets, fresh or frozen, thawed 1 1/2 c. Homemade Mix 1/3 c. lemon juice 2/3 c. beer 1 c. oil Place fish on paper towels and pat dry. Coat fish with 1/2 cup of homemade mix. In large bowl, combine remaining mix, lemon juice and beer. This mixture will foam. Stir until consistency of pancake batter. In large skillet, heat oil over medium heat. Dip fish into batter. Fry about 3 minutes on each side or until golden brown. Drain on paper towels. Serve immediately. Sprinkle with additional lemon juice, if wished. Makes 4 servings. HOMEMADE MIX: 1 1/2 c. flour 2 1/4 tsp. baking powder 3/4 tsp. baking soda 1 1/2 tsp. salt Combine flour, baking powder, soda and salt and mix well. Makes approximately 1 3/4 cups mix. |
