SQUASH CASSEROLE 
1 1/2 lb. yellow squash
1 med. onion, chopped fine
2 sm. carrots, grated
1 med. jar pimento
1 c. sour cream
1 can cream of chicken soup
1 stick butter
1 pkg. Pepperidge Farm herb stuffing mix

Cook squash in small amount of salted water 10 minutes. Drain slightly; melt butter and add stuffing mix. Coat well. Use 1/2 mixture to line bottom of 9 x 13 inch pan. Mix all other ingredients together including rest of stuffing mix and pour into pan. Bake at 350 degrees for 30 minutes. Serves 10.
