TASTY CHICKEN DIVINE 
1 c. onion
1 c. celery
1 c. green pepper
1 c. rice
3 tbsp. olive oil
3 cloves garlic, cut up
3/4 tsp. saffron - spice
Chicken, cut up
1 1/2 c. water
Garnish - Pimiento, green peas, asparagus

Saute onion, celery, green pepper in olive oil and garlic. Then brown chicken in oil. Put browned chicken pieces in baking roasting pan and add salted vegetables and 1 1/2 cups water and 1 cup uncooked rice and sprinkle over the top 3/4 teaspoon saffron spice and bake for about 35 to 40 minutes in a covered pan and garnish with pimiento, green peas, asparagus.
