SAUSAGE AND RICE CASSEROLE 
1 lb. ground sausage
2 c. cooked rice
1 med. sized chopped onion
1 1/2 c. tomato juice
4 tbsp. grated cheese
1/8 tsp. pepper
1 tsp. salt

Brown sausage and drain fat. In greased casserole arrange alternate layers of rice and sausage. Sprinkle each layer with chopped onions, salt, and pepper. Pour tomato juice over the mixture and cover with grated cheese. Bake at 375 degrees for 35-40 minutes.
