SWEET POTATO SOUFFLE 
3 to 4 med. sweet potatoes
1/2 stick butter
1 c. marshmallows, cut small
1 egg
Dash of salt
1/2 c. sugar
1/2 c. milk

Cook potatoes in skin until tender. Peel and combine with other ingredients. Whip with mixer while hot. Bake at 350 degrees for 25 minutes or until set. Remove and add topping.

TOPPING:

1/2 stick butter
1/4 c. brown sugar
1 c. graham cracker crumbs
1 c. chopped pecans

Melt sugar and butter together. Add other ingredients. Mix well. Spread on top of potatoes and return to oven for approximately 5 minutes.
