CRACKED WHEAT BREAD | |
2 c. boiling water 2 c. cracked wheat 1/2 c. brown sugar or honey 2 tbsp. butter 1 tbsp. salt 2 pkgs. active dry yeast 5 - 5 1/2 c. unbleached flour Combine cracked wheat, water, honey, butter and salt in large bowl. Cool to warm. Soften yeast in warm water. Add to above mixture and beat in 4 cups flour. Turn out on floured surface and knead in enough remaining flour to make moderately stiff dough. Knead 10 minutes. Place in greased bowl; cover and let rise in warm place until double. Punch down. Shape into 2 loaves. Place in greased loaf pans, turning to grease surface. Let rise until double. Bake at 400 degrees for 30 minutes. Yield: 2 loaves. |
