SPINACH PIE 
1 (9-inch) unbaked pie shell
1 (10 oz.) frozen chopped spinach, thawed and drained
1 c. ricotta cheese
1 c. grated Parmesan cheese
1 c. shredded Mozzarella cheese
3 eggs, beaten
1/8 tsp. nutmeg

Preheat oven to 350 degrees. Mix together spinach, ricotta cheese, Parmesan cheese, and Mozzarella cheese and eggs. Pour into pastry shell. Bake 45-50 minutes. Let stand 5 minutes. Cut in wedges.
