POTATO CHEESE CASSEROLE 
2 lbs. baking potatoes
1 1/2 c. sour cream
1 1/2 c. shredded Swiss cheese
1 med. carrot, peeled and grated
1/4 c. minced onion
2 tbsp. minced parsley
1 tsp. salt
1/2 tsp. dill
1/8 tsp. black pepper
Paprika

Bake potatoes in jackets until tender. Peel and grate. Combine potatoes with sour cream, 1 cup cheese, carrot, onion, parsley, salt, dill and pepper. Turn into buttered 1 1/2 quart casserole. Sprinkle with remaining cheese and paprika. Bake at 350 degrees for 30-40 minutes. Makes 6 servings.
