POTATO CHEESE CASSEROLE 
3 1/2 lbs. potatoes, peeled, and cut up
Salt
1 c. butter, melted
1 tbsp. Cheddar cheese, shredded
1/2 to 1 c. onion, chopped (to taste)
1/2 tsp. pepper
2 c. green pepper, chopped (optional)

Boil potatoes until tender. Preheat oven to 350 degrees. Grease 3 quart casserole. Mash potatoes. Add all ingredients to mashed potatoes, stir well to mix. Put into casserole. Top with toasted bread crumbs. Bake for 35 minutes. Can prepare early and refrigerate. Bake close to serving time.
