RICE PUDDING 
3 c. milk
1 tbsp. butter
1/4 tsp. cinnamon
1/2 c. rice
1/3 c. raisins
1/2 c. sugar
1/4 tsp. nutmeg

In a heavy saucepan, bring milk to boiling. Stir in uncooked rice, raisins and 1/4 teaspoon salt. Cover, cook over low heat, stirring occasionally for 30 to 40 minutes or until most of the milk is absorbed (mixture may appear curdled). Spoon into dessert dishes. Dot with butter and sprinkle with a mixture of the sugar and spices. Or, you can put the sugar, spices and butter into the rice mixture and cook them together for a while.

Grandma usually put the sugar and spices and let that cook with rice and milk for a while.
