LEMON PINEAPPLE CHICKEN 
1 lg. can chunked pineapple with juice
Reserved pineapple juice
1 tbsp. vegetable oil
2 chicken breasts, halved (4 pieces)
Pepper to taste
1/4 to 1/2 tsp. dried thyme
1/4 c. flour
1 tbsp. or less lemon juice
1 cube chicken bouillon

Heat vegetable oil in large skillet. Lightly saute pineapple chunks in oil. Remove. Pound chicken flat. Mix together pepper, thyme and flour. Coat chicken in flour mixture. Brown on both sides in pineapple flavored oil. Reduce heat. Add reserved pineapple juice, lemon juice and bouillon. Cover and simmer for 20 minutes. Thicken with corn starch and water. Before serving, add pineapple. Heat through. Serve with rice.
