APPLE COFFEE CAKE 
1/2 c. shortening
1 c. sugar
1 tsp. salt
1 tsp. vanilla
2 eggs
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 c. sour cream
2 c. chopped apples
1/2 c. nuts
1/2 c. brown sugar
1 tsp. cinnamon
4 tbsp. melted butter

Cream shortening and a 1 cup sugar; add salt and vanilla; mix. Add eggs, beat. Combine flour, soda and baking powder. Add to creamed mixture with sour cream. Stir in apples.

Spoon batter into greased 13 x 9 x 2 inch pan. Sprinkle with nuts. Combine brown sugar, cinnamon and butter. Pour over nuts. Bake at 350 degrees for 25 minutes. Yields 12 servings.
