POTATO PANCAKES (LATKES) | |
1 lg. onion, sliced thin Oil 6 lg. potatoes, peeled & grated 4 heaping tbsp. pancake flour 2 eggs, slightly beaten 1 onion, grated Salt & pepper to taste 1. Fry onion slices lightly in hot, deep oil. 2. Mix remaining ingredients well. 3. For each pancake, spoon 1 heaping tablespoon of batter into oil, flattening pancake with a spoon immediately. 4. Fry for approximately 5 minutes on each side or until browned and crispy. 5. Drain on paper towel and serve hot. |
