LOWFAT PANCAKES AND SAUSAGE 
Pancakes (serving for 1)

3 tbsp. skim milk
1 egg white or 1 tbsp. of Egg Beaters
3 tsp. butter, melted
3 tbsp. all-purpose flour OR 1 1/2 tbsp. wheat flour
1/2 tsp. baking powder
Dash of salt
1 tbsp. oatmeal

Mix well. Spray griddle with Pam. Cook over medium-high heat, flipping pancakes when bubbles appear in the batter.

This recipe makes 3 to 4 small pancakes. Equal to 1 starch-bread selection and 1 fat selection on the diabetic list. This is a great recipe for people living alone.

SAUSAGE:

1 lb. ground turkey
1/4 tsp. each of thyme, sage, marjoram and ground savory
1/2 tsp. each salt, pepper, and garlic powder
3/4 tsp. fennel seeds, crushed

Mix well, shape into patties and brown in Teflon pan. Makes 6.
