CORN BREAD MUFFINS 
1 c. all purpose flour
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. yellow corn meal
1 egg, well beaten
5 tbsp. butter, melted
1 c. milk

Preheat oven to 375 degrees. Mix flour, sugar, baking powder and salt. Add cornmeal. Combine egg, milk and melted butter. Add to dry ingredients. Beat until smooth but don't overmix.

Bake in greased muffin pans at 375 degrees for 12 to 15 minutes or until lightly browned.
