LEMON BARS 
1 (18.25 oz.) pkg. lemon flavor cake mix (not pudding type)
1/2 c. butter
3 lg. eggs
2 (8 oz.) pkgs. cream cheese, cut into chunks at room temperature
1/2 c. granulated sugar
1/2 tsp. vanilla
2 tsp. lemon juice
Confectioners sugar (optional)

Heat oven to 350 degrees. Grease and flour a 13 x 9 inch baking pan. Mix cake mix, butter and 1 egg in large bowl with electric mixer until crumbly. Press in bottom of prepared pan. bake 8 minutes; remove from oven. Meanwhile, in a medium-sized bowl with electric mixer or in food processor, beat or process cream cheese until smooth and fluffy. Mix in the remaining 2 eggs, the sugar, vanilla and lemon juice until blended and smooth. Pour onto hot crust. Bake 25 minutes longer until top edges are golden brown. Dust with confectioners sugar. Cool completely in pan on rack. Cut into squares. Store in refrigerator. Makes 48.
