3 c. chopped apples
1 1/2 c. Wesson oil
1 tsp. nutmeg
1 tsp. cinnamon
3 c. flour
2 tsp. vanilla
2 c. sugar
2 eggs, beaten
1 1/2 tsp. baking soda
1/2 tsp. salt
2 c. chopped pecans

Preheat oven to 350 degrees. Combine apples and sugar; let stand for 20 minutes. Add oil and eggs. Combine spices, soda, salt and flour; add to apple mixture and mix thoroughly. Add pecans and vanilla and stir. Pour into tube pan. Bake at 350 degrees for 1 hour.
