FRESH APPLE CAKE 
3 c. chopped raw apple
1 1/2 c. vegetable oil
2 c. sugar
3 eggs
2 1/2 c. sifted plain flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 tsp. vanilla
1 c. chopped walnuts or pecans
1 c. raisins
1 c. coconut
1 tsp. cinnamon

Pour oil into large mixing bowl; add sugar and eggs and mix well. Sift flour with salt, soda and baking powder. Gradually add flour to creamed mixture and add vanilla. Gently fold in chopped apples. Pour batter into a 10 inch tube pan that has been greased and floured. Bake at 350 degrees for 1 hour. Remove from pan after it is thoroughly cool. Drizzle with glaze.

GLAZE:

1 1/2 c. sifted powdered sugar
3 tbsp. water
2 tsp. vanilla

Mix and pour over cake.
