FRESH APPLE SPICE CAKE 
1 c. vegetable oil
2 c. sugar
3 eggs
3 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. vanilla extract
1 c. peeled, finely chopped apples
Pecans
Glaze (recipe follows)

Combine oil and sugar; beat well. Add eggs, one at a time, beating well after each addition. Combine flour, soda, salt, cinnamon and nutmeg; stir. Add dry ingredients to sugar mixture, beating well. Add vanilla; mix well. Stir in pecans and apples.

Pour batter into a greased and floured tube pan. Bake at 350 degrees for 1 hour and 15 minutes. Punch holes in cake and put glaze on cake while hot. Cool; remove from pan.

GLAZE:

1/2 c. sugar
1/4 c. buttermilk
1/4 tsp. baking soda
2 tbsp. butter
1 1/2 tsp. vanilla

Combine all in a saucepan. Bring to a boil; boil 4 minutes, stirring occasionally.
