FRESH APPLE FRUIT CAKE 
2 eggs, well beaten
2 c. sugar
1 1/2 c. cooking oil
2 tsp. vanilla
Juice of 1 lemon
1 tsp. salt
3 c. all-purpose flour
1 1/4 tsp. baking soda
8 oz. candied cherries
8 oz. candied pineapple
2 c. pecans
2 c. grated apples

Combine eggs, sugar; then add vanilla, oil, lemon juice and salt in large mixing bowl. Beat well. Mix flour and soda, add to mixture, then add cherries, pineapple and pecans. Add apples last. Batter will be thick so add fruits by hand. Bake at 300 degrees for 1 hour or until done.
