FRESH APPLE CAKE 
1 c. salad oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 c. pecans or black walnuts
3 c. tart cooking apples, chopped fine
1 (6 oz.) pkg. butterscotch chips

In a large bowl mix well salad oil, eggs, and sugar. In a separate bowl, sift together flour, soda, salt, cinnamon, and baking powder. Add to mixture stirring in nuts and chopped apples. Mix well. Spread mixture in greased 13 x 9 pan. Distribute butterscotch chips on top of cake. Bake at 350 degrees for 55-60 minutes. Cool and cut into squares. For best results bake 1 day before serving. Can be baked in bundt pan.
