ITALIAN MEATBALL SOUP | |
1 beaten egg 3/4 c. bread crumbs 2 tbsp. finely chopped onion 1/4 tsp. Italian seasoning 3/4 lb. hamburger or sausage 1 tbsp. cooking oil 1/2 c. chopped onion 1/3 c. green pepper, chopped 1 (16 oz.) can tomatoes 1 (8 oz.) tomato sauce 1 tsp. Italian seasoning 1 1/2 c. carrots (and other vegetables) Monterey Jack cheese or Mozzarella (for topping) In a bowl, combine egg, bread crumbs, 2 tablespoons onion and seasoning. Add meat and mix well. Shape into balls and cook in oil. Cook onion and green pepper in drippings. Drain and add meatballs, tomatoes, tomato sauce, and vegetables. Add 1/2 cup water, 1/4 teaspoon salt and Italian seasoning. Bring to boil and simmer 30 minutes or until vegetables are tender. Place shredded cheese on top to serve. Meatballs can be eliminated, and meat just browned (like spaghetti sauce) and fill it up with carrots, potatoes, turnips, string beans, etc. |
